Seabourn Enhances Alaska Cruise Product with Regionally-Inspired Culinary Program

To meet passenger demand for more immersive on-ship experiences, Seabourn has added a regionally-inspired culinary program to its Alaska cruises onboard Seabourn Encore. Featuring a series of destination-driven dining and beverage experiences, the program is designed to reflect the region’s unique ingredients and traditions.
“Seabourn Encore’s Alaska season gave us the opportunity to bring the destination into focus in a more intentional way,” said Mark Tamis, president of Seabourn. “From the first evening on board through the final days of the voyage, the culinary program is designed to reflect where guests are and deepen their connection to the experience.”
The offerings comprise a series of experiences that take place across The Restaurant and The Colonnade. They include a celebratory first-night sailaway to a mid-cruise family-style dinner paired with scenic cruising, and more.
Dining experiences include:
Surf & Sear Sailaway: A sailaway dinner exclusive to Alaska itineraries, served buffet-style in The Colonnade on the first evening of each new voyage. The menu pairs seafood and steaks to kick off the journey with additional Alaskan-inspired dishes like Weathervane Scallops and Chilled Alaskan Crab.
Alaskan Seafood Broil: A three-course culinary event served in The Colonnade, featuring King Crab legs, Alaskan salmon, mussels, bacon-wrapped scallops, and shrimp. Tables are dressed with paper tablecloths, guests are given Seabourn-branded bibs, and crew wear lumberjack shirts and jeans, complete with crackers and seafood picks.
Fisherman’s Table: An intimate, shared tableside dining experience, also in The Colonnade, spotlighting salmon and halibut, served mid-cruise and timed to scenic sailing near Sitka on some itineraries and Misty Fjords on others.
Midnight Sun Dinner: An elevated Alaska-inspired dinner in The Restaurant that brings the region’s wild spirit to dinner, with menu items that include wild mushroom consommé, Alaska King Crab salad, olive oil poached black cod, and baked Alaska.
Alaskan Earth & Ocean: An Alaskan twist on Seabourn’s Earth & Ocean menu, brought inside to The Colonnade for two evenings per voyage, with different menus on each night.
Alaskan Brunch: Served once per cruise during a scenic sailing day in The Restaurant, this brunch features locally-sourced seafood and foraged flavors. Menu highlights include smoked Copper River salmon, Alaskan Crab Benedict, foraged mushroom omelet, and an Alaska-inspired baked Alaska.
Alaska Fish & Chips: A lunch celebration in The Restaurant featuring the classis seafood dish that pairs battered fish and steak fries with local beers. The fish is sustainably sourced from local waters. The menu also includes Alaskan seafood chowder and baked Alaska.
A long with regionally-inspired cuisine, Seabourn is also elevating its beverage selection onboard its Alaska sailings with a collection of original cocktails and a curated selection of local beers. An example are the Glacier Fir (a light aperitif-style sipper) and Inside Passage Punch (a rhubarb-based punch) cocktails, both of which are crafted with Alaska glacial ice and blends regional ingredients. Other cocktails include the Midnight Sun No. 20, the Denali Bramble, and the Aleutian Sunset.
When weather permits, additional culinary experiences might be offered on the outdoor decks and can include caviar tasting, Glühwein and hot chocolate service, and salmon and corn chowder on deck.
