Virgin Voyages Unveils All-New Spanish-Inspired Culinary Venue for Brilliant Lady

When Brilliant Lady debuts this fall it will feature an all-new dining concept for Virgin Voyages – Rojo by Razzle Dazzle – that will feature a variety of Spanish specialties.

Rojo by Razzle Dazzle is co-helmed by chefs Justin Severino – a four-times James Beard Foundation award nominee – and Nate Hobar, who co-run Morcilla, a Spanish-style charcuteria in Pittsburgh. .

“Virgin Voyages set out to be a disruptor from day one, and our culinary program – with Michelin-chef designed menus and boundary pushing creativity – was always central to that mission,” said Levi Mezick, directory of culinary program development for Virgin Voyages. “Spanish cuisine and the communal dining traditions complement our commitment to authentic yet innovative experiences for our Sailors.”

By day, Razzle’s signature brunch will have a Spanish-American twist with new dishes that include jamon croquettes paired with morning classics like acai bowls, pastries and frittatas. When the sun sets, Rojo transforms into an elevated dining experience pulsing with vibrant Spanish energy. The menu will feature pintxos, tapas, and platos grandes – all pulling inspiration from Spain’s renowned culinary regions. 

Among the menu items will be Morcilla’s signature Oxtail Montadito with braised oxtail, caramelized onion, mahon cheese, and crostini.

To go with the Spanish menu, Virgin Voyages partnered with Onada Consulting from Barcelona to bring authentic Spanish cocktails to the venue. On the wine menu, cruisers will find everything from reds like Rioja and Ribera del Duero to refreshing Albariños from Rias Baixas. For brunch, Rojo serves up artisanal vermouths, vibrant sangrias, well-paired sherries and sparkling Provocativo cava spritzes.  

Additionally, Virgin Voyages completely reimagined the Razzle Dazzle space for Rojo to create an environment that honors Spain’s communal dining traditions. Share tables and intimate nooks give cruisers a choice of what type of experience they want to have.

More Virgin Voyages Menu Tweaks

Rojo by Razzle Dazzle isn’t the only refreshed foodie experience coming to the Virgin Voyages fleet. Extra Virgin is pairing existing favorites with new pastas, arancini, seafood risotto, and roasted monkfish, among others. At Gunbae, new items include kimbap rolls, bulgogi fire meat, and bo ssam (whole roasted pork butt with oysters and caviar).  

Along with the new restaurant concept, Virgin Voyages recently unveiled seven original productions that will debut on Brilliant Lady this fall.
