It might be simplest to say that Lyonnaise cooking originated with local ingredients and the experiences of the wealthy. Traditional Lyonnaise cuisine dates back to the 16th century, when the Queen of France Catherine de Medici, brought cooks from Florence to create dishes using the local French fresh ingredients. Later, as the city was on an active trade route in the Middle Ages, the wealthy merchants known as “Les Lyonnaise” devoted more time to the creation and appreciation of food, helping to grow gastronomy into what we have today.
