Delightfully Delicious; Inside an Authentic Bouchons Lyonnais

France’s second largest urban area is a favourite among travel advisors and clients alike. Located about an hour’s drive from Beaujolais and Cotes du Rhone wine regions, Lyon is filled with all the history and architecture you might expect from a 2,000 year old European city.

And while many regions in France are known for different things; lavender, history, even mustard, Lyon is probably best known for its authentic gastronomy, so much so that the region has its own designation. In fact, Lyon is widely recognized as the world capital of gastronomy and with more than 1,000 restaurants, has of the highest per-capita concentration of restaurants in France.

The term gastronomy is often used more casually to describe the restaurant scene of a particular destination, but there is actually quite a history and science to its origins. Wikipedia defines it as the study of the relationship between food and culture; how cooking styles of years past are incorporated into the dishes we delight in today.
