New Luxury Hotel ONE | GT Opens in Grand Cayman’s Capital City

A new hotel is making a splash in the luxury hospitality scene in Grand Cayman.
ONE | GT just opened in early May, bringing 97 condo-style hotel suites with 80 private residences in the heart of the island’s capital city of George Town. It is also the island’s only hotel with membership in Small Luxury Hotels of the World.
Grand Cayman is typically known for its resorts on the iconic Seven Mile Beach. Though ONE | GT is just a six-minute drive from there, the property dares travelers to look beyond a beach-only vacation in the Cayman Islands. The location is walking distance from the financial district – dubbed the “Wall Street of the Caribbean” – where guests will find nightlife, dining, and a growing arts scene. It is also walkable to the island’s iconic dive spots, marinas, and water sports.

“ONE | GT represents a defining moment for George Town, and a rethinking of what Caribbean luxury can be,” said Jeremy Hurst, president of IRG and developer of ONE | GT. “Our vision was to introduce a new kind of destination rooted in urban energy, luxury design and cultural depth, extending well beyond the beachfront. With ONE | GT, we are creating a place to live and gather while contributing to a broader shift in how Grand Cayman is experienced and positioned on the global stage.”
The hotel’s suites, ranging from one to three bedrooms, all include full kitchens, generous living areas, spa-style bathrooms, and private balconies.
The property also introduces Grand Cayman’s first rooftop restaurant, bar, and infinity pool, Byū, which offers Japanese-inspired eats. Other dining options are Perle, a French-Mediterranean restaurant, and Café Bellini, an Italian-inspired bakery and cafe. There is also a third-floor pool in addition to the rooftop pool.
Amenities include the brand’s signature Stay Services: grocery pre-stocking, a fitness center with Technogym equipment, valet parking, wellness activities, and a shuttle service.
